Finely chop the red onion and garlic. Remove the seeds from the red pepper and cut it into small pieces.
Preparing the vegetables before cooking helps the recipe come together smoothly.
Heat the olive oil in an ovenproof frying pan over a medium heat. Add the onion and red pepper, then cook for around 5–6 minutes, stirring occasionally, until softened.
Add the garlic and cook for another 30 seconds, taking care not to let it burn.
Stir in the tomato purée, smoked paprika, dried oregano and ground cumin. Cook for around 30 seconds to release the aromas.
Add the chopped tomatoes and season with salt and black pepper. Stir well and allow the sauce to simmer for 5–7 minutes, until it thickens slightly.
Taste the sauce and adjust the seasoning if needed.
Make four small wells in the tomato mixture using the back of a spoon. Crack an egg into each well, taking care not to break the yolks.
Transfer the ovenproof pan to a preheated oven at 180°C fan / 200°C conventional / Gas Mark 6.
Bake for approximately 8–12 minutes, or until the egg whites are set. Cooking time will depend on your oven and how firmly you prefer the yolks cooked. Ensure the eggs are cooked safely for your needs.
If your pan is not ovenproof, transfer the tomato sauce to a suitable baking dish before adding the eggs.
Remove the pan carefully from the oven and allow it to rest briefly. Scatter the chopped parsley over the top and serve while warm.
Wholemeal bread or toasted sourdough works well for scooping up the tomato sauce. You can also serve the dish with a fresh green salad.
Let the sauce thicken first. Simmering the tomatoes before adding the eggs helps prevent the finished dish from becoming watery.
Make even wells. Spacing the eggs around the pan helps them cook more evenly.
Check the eggs as they bake. Begin checking towards the shorter end of the cooking time, as eggs can firm up quickly in the oven.
Choose the right pan. A shallow ovenproof frying pan or baking dish allows the eggs to sit neatly in the sauce.
Adjust the seasoning. Smoked paprika adds warmth, while cumin gives the sauce a deeper flavour. Reduce or omit either spice if you prefer a milder dish.
Stir a handful of fresh spinach into the tomato sauce before adding the eggs. Allow it to wilt, then continue with the recipe.
Add around 100 g of drained, rinsed chickpeas to the sauce before simmering. This gives the dish extra texture and makes it more substantial.
Crumble a little feta over the tomato sauce just before baking. Its salty flavour complements the tomatoes and herbs.
Add a pinch of chilli flakes with the other seasonings if you enjoy a little heat.
Replace the parsley garnish with fresh basil or coriander for a different finish.
Choose an accompaniment that complements the tomato sauce and suits your appetite.
You can keep the meal simple or add a side depending on the occasion.
After a busy day, dinner can become another task to rush through. Taking time to prepare a meal, enjoy its flavours and sit down without distractions can create a small pause in your routine.
For some people, simple habits such as cooking at home or making time for a quiet meal help bring a greater sense of intention to everyday life.
